Bread and Roses, Paris

Just a block away from the lovely Jardin du Luxembourg in the fashionable St Germain des Prés district is one of my favorite spots in Paris to have lunch, Bread and Roses. Besides being a bakery featuring a wide range of beautiful, organic breads, fruit tarts, luxurious slices of cheesecake and other sweet indulgences, this wonderfully cozy spot is the perfect place to enjoy a pot of tea and delight in huge, buttery, savory puff-pastry quiches filled with bright vegetables and herbs.  They are served with a generous mesclun salad infused with sprigs of dill and drizzled with a tangy and sweet mustard vinaigrette. So delicious and filling is this meal that you might not have enough room for dessert.  Which is okay, since it’s nice to purchase a variety to take home with you.

The service was impeccable and very friendly. The charming host and lovely server remembered me on my second lunch there, which, to me is always impressive and makes the whole experience much warmer and neighborly. It’s definitely a place where you can stop in for lunch and end up spending the entire afternoon, lingering over tea and scones.

And while the prices are a bit steep for those on a budget, the food warrants the investment.  After lunch on both occasions, I bought a loaf of their divine brioche to enjoy and turn into the best overnight French toast ever.

I am so looking forward to my return visit and trying to figure out how bring some of their breads with me on my walk!

Perserverance

Pierced and broken. Insides pouring out.

But I suppose that is to be expected when life falls apart around you.  Paris has been wonderful to me since I arrived, except where Croque Madams have been concerned. So the fact that they have all been really, really bad comes as no surprise. It’s actually quite ironic.  And yet, I keep ordering them. As though by some miracle I will find one that makes me happy, if only for a little while.

Afterall, what else can I do?

Cinnamon Buns, A Mother’s Day Treat

Cinnamon BunsYesterday I awoke to the scent of hot cinnamon buns wafting up the stairs to my room. That smell will send you deeper into dreamy bliss!  They were baking in the oven and soon arrived to my bedside on a plate drenched in a sticky, gooey glaze of sweet goodness.  Along with a fresh pot of coffee and three, very excited children bounding into bed with me armed with homemade cards and gifts, it was a perfect Mother’s Day morning. These were actually even better today once the glaze had time to soak in, making them even sweeter. Ten seconds in the microwave makes them extra gooey all over again.

This recipe begins with a Basic Sweet Dough that can be used for tasty coffee cakes or sweet buns.

 

Ingredients

 

Basic Sweet Dough

½ cup sugar

2 packages dry yeast

1 ½ tsp. salt

7 cups flour

1 ¼ cup apple juice

1 cup butter or margarine

3 eggs, room temperature

1 tsp. Spice Islands Vanilla Extract

1 tbs. vegetable oil

Filling

 

½ cup brown sugar, firmly packed

½ cup walnuts, chopped

2 tsp Spice Islands Cinnamon, Ground Saigon

¼ cup butter or margarine

Glaze

1 cup confectioner’s sugar

4 tsp. water

 

Method for the Basic Sweet Dough

In the bowl of your mixer, combine the sugar, yeast, salt, 2 cups of the flour.

Meanwhile, in a 1-quart saucepan, heat the apple juice and butter until just warm.

Gradually add the warm liquid to the dry ingredients blending with the mixer at a low speed until just combined then increase speed to medium and beat for 2 minutes.

Add the eggs, the Spice Islands Vanilla Extract and 2 ½ cups of the flour. Continue beating for another few minutes. Add a final 2 cups of flour and beat together until combined.

Onto a lightly floured board, turn out the dough kneading for 10 minutes until smooth and elastic. Add additional flour as necessary.

Place the dough in a well oiled bowl and turn the dough to cover in the oil. Cover and let rise in a warm place for about an hour or until doubled in bulk.

When ready, punch the dough down and allow it to rest for 15 minutes.

 

Method for Preparing the Cinnamon Buns

 

Prepare the filling in a medium bowl by combining the brown sugar, walnuts and Spice Islands Cinnamon, Ground Saigon

Melt the butter in a small saucepan over low heat. .

Place the dough on a floured board. Roll it out to form a 12” x 18” rectangle.

Brush the top of the dough with the melted butter and sprinkle the Spice Islands Cinnamon, Ground Saigon and sugar mixture over the top.

Beginning with the long side (the 18” side) roll the dough, jelly roll fashion, pinching the seams to close it.

With the seam sides down, cut the roll crosswise into 18- 1” slices. Pinch the outer seam together on the bottom of each sliced bun.  This way the centers will puff up when baking, but the filling won’t spill out.

Place the rolls into a cake pan, either square or round.  Cover and let rise for about 30 minutes.

Preheat oven to 400 degrees F.  Bake until light golden brown, about 30-35 minutes.

While the buns are baking; prepare the glaze by combining the confectioner’s sugar and the water.

Remove the buns from the oven and pour the glaze over the top. Serve warm to grand applause and smiles!

 

Disclosure: We recently received several awesome spices from Spice Islands to try and review.  We have been busily creating recipes to go along with all the different varieties of spices and you will see them over the next few weeks as we post about them.

Today’s recipe was greatly enhanced by Spice Islands Pure Vanilla Extract made from beans grown in Madagascar. This vanilla extract is wonderful in that there is no corn syrup added and it is naturally sweet. David Lebovitz wrote an incredibly informative blog post about this extract and the process it goes through to become the great extract it is.

The other spice that graced these sweet buns is cinnamon, Spice Islands Cinnamon, Ground Saigon. Cinnamon is one of my favorite spices.  It imparts a spicy sweetness and warm a aroma that not only enhances baked goods, but several meat dishes as well.  Spice Islands Cinnamon comes from the forests of Vietnam, which is known for its premium cassia (a cinnamon tree). Because this variety of cassia is high in volatile oils, the Vietnamese cassia trees produce a deep, reddish-brown cinnamon with an intense fragrance and a sweet but almost chili like flavor. I can not wait to make my Cinnamon Spiced Baked Chicken and Rice with it and share it with you! Meanwhile, I have to go reheat some Cinnamon Buns. They are calling my name!

Today we went to the beach and tonight we had the Today we went to the beach and tonight we had the traditional English roast for dinner at The Presbytere. Do you see the size of that Yorkshire Pudding? Incredible! And it was filled with the most luscious and velvety gravy. Again, every course was perfect.  For dessert we had the same as last night- zucchini cake and a white chocolate cream over crumbles and gooseberries. I really need to get these recipes! Not to be missed! Had such a terrific dinner at Th Not to be missed! Had such a terrific dinner at The Presbytere last night, the new restaurant by Chef Edward Delling-Williams. The beautifully converted building is situated near the estuary of the Sienne where some ingredients are foraged. We sat outside in the breezy sea air and it couldn’t have been a more perfect evening. We drank Spritz’s and Pimm’s while we perused the menu. Though described as a gastro pub, the food is truly on another level, where fresh, local ingredients are highlighted. We shared starters of pork rillettes with a lightly smoked onion powder, a thick slice of house made lamb terrine served with a tangy walnut, English pickle and prune catsup, and a plate of simply marinated red peppers, all served with a generous basket of perfectly crusty bread with a soft, chewy center. For our mains, we debated over the whole fish and wished we had more people with us for the leg of lamb to share but in the end we chose the veal, thin slices served rare over fresh green beans with a deeply developed reduction sauce, as well as a plate of green and yellow zucchini served with a house made ricotta, apricot purée, chervil and a hint of mint. Each bite was better than the one before. We shared a bottle of Petit Chablis and the delightful, friendly sommelier confirmed that we couldn’t go wrong with our choice.  She was right! Fruity, light and delicious. Dessert is always my favorite part of any meal and the courgette cake (zucchini) was divine. A dreamy, light cream cheese frosting adorned this soaked, dense, sweet cake filled with bits of zucchini and carrots. I make zucchini cake (bread/muffins) often and nothing I’ve ever made even compares to this one. We also shared the white chocolate cream over a sweet crumble. It was such a pretty and light dessert. The staff made us feel so welcome and right at home from start to finish, an experience not to be missed and we can’t wait to see what else Chef has in the works. P.S. We are headed back tonight for the traditional English Sunday roast with the kids. Today, we had an amazing lunch near to Granville. Today, we had an amazing lunch near to Granville. While we awaited stores to reopen we explored a little and found this gem of a place! What a beautiful setting and fabulous menu! The restaurant is part of a farm, La ferme de la Chèvre Rit. We sat outside in the sunshine and shared a demi bottle of clairet and a planche  with some of their homemade chèvre and terrines and meats. Then we had a salad with the most delicious pain d’épices topped with a lightly grilled chèvre and balsamic. We also had the basil risotto which was delicious and had just the perfect amount of cheese. Dessert was a delightfully light but rich chocolate molten cake with sweet cream and caramel and a crème brûlée. We wish we could have stayed for the whole afternoon.
