One of my favorite vegetables is asparagus and even though you can find them all year round, its Spring and Summer when I purchase them every week for us to enjoy. I prefer the nice plump ones to the thin ones because I feel that the fatter ones have the most delicious flavor. We love the fine line between sweet and savory that an ingredient like pumpkin conveys. In our version, we tamed the spice a bit with honey and added more milk and stock for a rich, creamy soup. The sour cream added right at the end gave the soup a luxuriously velvety finish while the fried onions added a chewy and flavorful mouthful.
