Food Blog Camp! ¡HOLA! MÉXICO! Part Uno.

We have escaped the snow and are here at Food Blogger Camp, in Mexico, enjoying the sun, eating way too much good food, making new friends, and learning how to make Kitchen Conundrum a much better blog for you to enjoy.  As far as camp goes, this is the best “camp” we have ever been to!

We are thrilled to be staying at an amazing tropical paradise called the Grand Velas, Riviera Maya. And guess what? It’s an all inclusive! Even the mini bar is FREE!  This is not your typical all inclusive though. The resort has some of Mexico’s finest restaurants. We are making it a point to try them all!  But, it’s not all about the eating, even though we are stuffing ourselves to the gill at every meal- and sometimes in between. (We’ll talk about diets next week!)

Thus far, the sessions have all been extremely informative and more importantly, they have provided a lot of useful and usable information. We are learning about photography, food styling, monetization and the business of blogging. There are also these amazing cooking demos given by the fantastic chefs here at the Grand Velas, where we are given the opportunity to watch, learn, photograph and taste their incredible creations. Of course, there is free time where we can relax at the pool or on the beach, sip cocktails and just soak in the sun. It doesn’t get much better than this!

Pom Wonderful Dinner Party

Pomegranates are synonymous with Fall menus and Rosh Hashanah meals. Harvested now, they can last quite a long time and be used for many different recipes throughout the entire holiday season. Their festive appearance also makes them perfect to use as decorations.

So when we saw that POM Wonderful had teamed up with FoodBuzz and was selecting hosts to create a POM Wonderful Dinner Party, we jumped at the chance and were thrilled to find out that we were among only 100 participants across the country to be chosen.

Imagine our surprise when we were received two crates, not one, but two, full crates of pomegranates to cook with and to use as decorations. That’s about 50 pomegranates in total!

They also sent us a fun apron to wear to shield us from the mess we were sure to make, as well as a cutting mat with handy pomegranate opening instructions printed on it. In addition, there were 10 gift bags for us to give out to our guests. Inside featured a POM Wonderful bracelet and a package of recipes, many of which we used for our menu. There were also coupons for free bottles of POM Wonderful juice!

So armed with our apron and recipes, and more pomegranates than we have ever seen, we got down to business and began the party preparations.

But first, we wanted to learn a little background on our featured guest…

The pomegranate originated in eastern Iran, and is one of the oldest fruits known to man. Because of its many seeds, the pomegranate has been used throughout history as the representation of fertility and plenty.  The spies even brought a pomegranate back to Moses in the dessert to show him that the land of Israel was fertile. Jewish tradition holds that a pomegranate has 613 seeds to represent the 613 commandments in the Torah. (We’ve never counted, but now, with all these pomegranates around, we will!) Even the design of the pomegranate was woven into the high priest’s robes, and brass representations were part of the Temple’s pillars. It is mentioned six times in the Song of Solomon. Pomegranates also figures into many Christian and Catholic paintings by Botticelli and Leonardo da Vinci, often seen in the hands of the Virgin Mary or baby Jesus.

We also see the pomegranate in ancient Greece and Rome. Homer mentions it in The Odyssey, as part of the gardens of Alcinous and the Greek myth of Persephone, the chthonic goddess of the Underworld, prominently features the pomegranate.  The fruits were even found in China during the Han and Sung dynasties. Perhaps, it is so widely revered not just because of the symbolism of abundance, but also because of  the fruits many health benefits as well. Known for its antioxidant and anti-disease benefits, the pomegranate has been used as a source of traditional remedies for thousands of years.

The Spanish Conquistadores are credited for bringing the pomegranate to America and Jesuit missionaries carried it north to their missions in California. But around 1896, a nurseryman named Mr. Bearss who came from Porterville, CA, brought pomegranate cuttings back from Florida to California. A new variety was grown and yielded a much sweeter and juicier fruit so he aptly named it, Wonderful. This variety is now the fruit that POM Wonderful harvests.

The word pomegranate actually comes from the Latin pomum or apple and granatus meaning  seeded. You can see that this “pomum granatus” has influenced the name in many languages.  In French, the word for the fruit is grenade, and in Hebrew the word is rimon, which also means grenade!  This is likely because it seemed so incredibly difficult to remove the arils and they would literally explode everywhere!

The event was incredibly fun and we entertained guests that we had not seen in quite a long time. Our first thought was to go over the top with ornate golds and reds, but we had just finished painting our dining room and the ceiling in beautiful blues, so we changed the décor to silver.

We found some dazzling initial ornaments that we used to create the place cards for each person. Luckily, everyone had different initials!  The silver chargers and white plates and grandmother’s silverware just popped on the backdrop of a black tablecloth. We created a very simple and elegant centerpiece featuring pomegranates in a tower vase surrounded by tea lights, pomegranates and strands of silver beads. We tried to make the rest of the decor as organic as possible to our own decor so we just stratigically placed the pomegranates around the house in different places.

After we determined the décor, we choose our menu. A few of the recipes came from the package that POM Wonderful had sent. And while we usually refrain from over using a single ingredient throughout our menus, we were never overwhelmed by the pomegranates and the flavors worked perfectly together throughout the entire dinner.

Once the decorations were set, it was time for dinner!

We had an amazing time. All the food turned out really well, and we had nothing left over! We also found some wonderful (no pun intended!) uses for pomegranates in recipes. They really have a great flavor and we are also enjoying eating just the arils by the handfuls!

One final note though, we had an incredible amount of pomegranates left untouched and being people that feel it’s terrible to waste food, we donated a case and a half to our local food bank. We encourage others to do the same.

We Interrupt The Thanksgiving Posts

But have no fear, all the recipes and shopping lists will be posted tomorrow. Just in time to start your Thanksgiving preparations in earnest. But today I want to tell you about an awesome Food Photography workshop I took this past weekend. It was given by Lou Manna, a world renowned photographer and who specializes in food photography. Just have a look at his website  and see his beautiful work.

So it was only natural that I was incredibly nervous and intimidated going into his studio. My food photography skills are really lacking and even more so, my camera is just really too complicated for me. But Lou is really down to earth and incredibly personable. Plus, he really enjoys teaching people how to take great pictures. He completely put me at ease with his easy going manner and I learned so much!

The workshop went from 10am until 5pm and covered everything from lighting to focal points, composition and even some basic camera settings. When I went in, I was shooting in the P mode (preprogrammed, easy and automatic) now, I am pretty comfortable in A (aperture mode), S (shutter mode) and even M (manual mode).

The class learned all kinds of tricks, like using simple cosmetic mirrors (smoke and mirrors!) to aid in lighting and create highlights in dark spots. This really amazed me because I actually have several makeup mirrors already around my house and I would have never thought to use them this way.

I also learned that I really should invest in a good strobe or studio light. Just one would be sufficient, but it makes a world of difference in the photos. I could also use some reflectors and arms. So those will be my next equipment investments.

After our lunch break we all brought back some items to shoot. I choose some cute cupcakes, while others in the workshop brought back everything from sushi to apple tarts and one participant, a chef, even brought back a fillet of salmon with some haricot verts, heirloom tomatoes and capers and cooked it right in the studio kitchen!

Here’s a look at just a few of my pictures. As you can see, that they get progressively better!

The last two are so much better! The first ones were shot with only available light, which unfortunately fades very fast and was subject to clouds. The last two are shot under studio strobes. A thousand times better!

I am so very happy that I took this workshop. They are run through Adarama Camera Store here in NYC, and I would highly recommend taking this workshop if you are ever have the opportunity. It is well worth it and gets two spoons (thumbs!) up from me!

Totally forgot to post the cut of my soap here. It Totally forgot to post the cut of my soap here. Its been very busy and I’m like a whirling dervish in all different directions. On the food front we made some favorites-Chicken Marbella that sustained us for a week and also a Corned Beef and Cabbage dish because it is March after all. But it was good to have the comfort foods we love and old standards as they provide the most contentment when it’s chaos everywhere else. Regular work and then some wholesale orders and getting the line poured for our Spring/Summer scents. And helping others with a few website issues. And kids. Thankfully, it seems to all be under control now and I’m really happy to be busy. All good things! 

The Eucalyptus Mint cut (smells amazing!) turned out so nice. Very happy with it. Had a request for a classic Cucumber Melon soap. Also a lovely fresh and clean spring/ summer scent. Available soon. But the Spring/Summer line of candles are done and are now available! Yay!

Still cooking. This week I made the amazing stuffe Still cooking. This week I made the amazing stuffed vegetables from Aglaia Kremezi and they were so delicious. But I didn’t take any photos. I did, however, take video of my latest soap pour. White eucalyptus and mint. Smells amazing! Can’t wait to see how the cut turns out. It was a bit thicker trace than I expected.

It’s been ages since I’ve posted here. Well, a It’s been ages since I’ve posted here. Well, a month, lol. Thats a while! We made it through the holidays and we are into the new year. And while we are still cooking a lot, most of my big concoctions lately have been outside the kitchen and in the soap/candle studio. Here I am mixing scents, clays and mica colorants.
